Here is a delicious recipe with a taste of the orient.
1 kg Pork
juice of two lemons
4 pints of cider 3 to drink plus one for the sauce
2 tbsp honey
1 star anise
salt and pepper to taste
Serve with vegetables of your choice ,such as new potatoes ,peas and carrots.
Gently brown the pork in a frying pan in olive oil or clarified butter(ghee).If you don’t have ghee,you can still brown the pork,but you should add the pork to the butter whilst it is still melting to avoid it burning.Also,make sure it doesn’t get too hot.Caramelise the onions.
Squeeze the juice from two lemons.Add this to the cider,together with the honey,and stir until the ingredients emulsify,or use a food processor if you prefer.
